The Négrette olive oil is a golden colour. It's a fine, sweet, fruity oil with subtle notes of hazelnuts or almonds according to the year. A slightly peppery atypical aftertaste pleasingly completes the overall effect.
Esquichade of zucchini

Esquichade is a unique recipe rustled up by our cordon bleu chef in Manosque, its name comes from the Provençal word 'esquicher' which means 'to squash'. It is a cream of grilled courgette seasoned with basil, pine seeds and a touch of green aniseed – a real treat!
