Calissons are a typical confection from the south of France - made from a thin paste of candied melon, almonds, topped with royal icing. It is the speciality of Aix-en-Provence, the home town of the Aix&terra brand. The apricots, very ripe and juicy, give a traditional jam if used alone. In combination with calissons, the jam finds a new dimension of original flavours!
On toast or in your croissant in the morning, or on financiers for a snack. For those with a sweet tooth, it can be enjoyed in an apricot tart, with rice pudding or in a chocolate cake.
