240 g liquid cream 35%
140 g dark chocolate
28 g cocoa powder
160 g apricots
20 g flour
60 of caster sugar
1 organic egg
48 g soft butter
Heat the 35% liquid cream and pour over 120 g of dark chocolate. Mix well and set aside in a cool place for 24 hours. The next day, put the mixture in a mixer and whip it up like a whipped cream. Put in a pocket.
For the brownie, beat the eggs and sugar together. Melt the remaining 20 g of dark chocolate, butter and salt. Stir in the whitened eggs. Finally, stir in the flour and cocoa powder. Pour into a well-oiled ovenproof dish and bake at 180° for about 20 minutes.
Take half of the apricots and cut them into quarters, place them on a baking sheet and brush them with Apricot jam with organic calissons aix&terra. Bake at 180° for about 8 minutes. Cut the other half of the apricots into brunoise.
To serve, cut the brownie into small squares and place them in the centre of the plate. Place dots of chocolate ganache on top. Place the roasted apricots on the brownie and dots of Aix&Terra Organic Apricot Jam with Calissons. Finish with the apricot brunoise. Serve immediately.
