440 g cod backs
200 g rock soup
240 potatoes
80 g green beans
160 g snow peas
120 g ofAïoli doux bio aix&terra
Flower of salt of Camargue - pepper.
Cook the green beans for 6 minutes and the snow peas for 4 minutes in boiling salted water and then cool. Peel the potatoes and cook them in salted water.
Prepare the cod back in 110 g portions. Heat the rock soup and keep it in a bain-marie. Season to taste.
Cook the codfish back, seasoning it with salt, pepper and Organic lemon olive oil aix&terra in the oven at 180° for about 8 minutes. Reheat the potatoes and vegetables if necessary.
In a plate, pour the rock soup, put the cod back and then the vegetables. Finish with a nice quenelle ofAïoli doux bio aix&terra and fleur de sel de Camargue.
