4 organic eggs
60 g pepper
20 g radish
80 of green beans
80 of peas
40 g cherry tomatoes
80 g sandwich bread
20 of parmesan cheese PDO
60 g of Aix&terra organic dried tomato delight
60 of Aix & Terra Tuna Delight
20 ml ofOrganic basil olive oil aix&terra
20 ml of Vinegar with tomato pulp and basil aix&terra
A few basil leaves
Salt and pepper.
Cook your eggs in hot water with vinegar for 5 minutes 40. Then, immediately cool them in an ice-cream maker. Carefully remove the eggs from the pan and store in a cool place.
Cook the green beans and peas in a salted heater and then cool them down. Cut them into small pieces.
Dice the peppers and slice the radishes.
Prepare the vinaigrette by mixing theOrganic basil olive oil aix&terra and the Vinegar with tomato pulp and basil aix&terra.
Make shavings of parmesan cheese.
Make triangle-shaped slices of bread and toast them. Mix the vegetables with the vinaigrette.
To prepare, spread the bread triangles with Aix&terra organic dried tomato delight and place them in the centre of the plate. Make a quenelle of Aix & Terra Tuna Delight on top. Arrange the soft-boiled egg and finish with the vegetable mixture and some basil leaves.
You can also make this recipe with autumn and winter flavours, using seasonal vegetables. At this point, serve the warm soft-boiled egg.
