4 extra fresh eggs
4 tablespoons of fresh cream
4 teaspoons of Aubergine caviar with truffle aix&terra
50 g of County cut into small cubes
1 dash ofOlive oil and black truffle aix&terra
4 slices of sliced bread - semi-salted butter (for the pastries)
Flower of salt - Pepper
Preheat the oven to 180°. In each ramekin or mini-cup, pour a spoonful of fresh cream, making a well in the centre of the cream.
Break the eggs separately and pour each egg into its nest gently, so that the yolk remains in the centre. Place a teaspoon of Aubergine caviar with truffle aix&terra next to the yolk, and the small cubes of Comté around it.
Place the casseroles in an oven dish, and pour hot water into the bottom of the dish halfway up the casseroles. Place the bain-marie in the oven for 8 to 10 minutes. During this time, prepare the buttered bread rolls.
As soon as the eggs are ready, sprinkle withOlive oil and black truffle aix&terra and serve with the mussels.
The cooking time for your eggs depends on your oven. Keep a close eye on your eggs: the white should start to set, but the yolk should remain runny.
