30g of Organic mayonnaise with summer truffle aix&terra

To make this beef tataki, start by preparing the marinade: mix the Vinegar with fig pulp aix&terra, l'Organic basil olive oil aix&terra and theOrganic garlic olive oil from the Drôme aix&terra. Let the meat marinate for 24 hours.
Preheat your oven to 180°C. Wash and halve the potatoes and place them in a dish, seasoning them to taste. Place in the oven for about 35 minutes. Sear the meat on both sides in a frying pan, then put it back in the marinade and let it cool. Arrange the Organic mayonnaise with summer truffle aix&terra in a ramekin.
Arrange the potatoes in the centre of the plate. Cut thin slices of meat and arrange them around the potatoes in a rosette. Sprinkle with fleur de sel. Drizzle the beef tataki with the remaining marinade!
