Vegetable salad, organic chilli pepper poichichade aix&terra
60 g of Raspberry pulp vinegar aix&terra
80 g mesclun salad
8 cherry tomatoes
200 g of Petit billy
120 g drained snow peas
240 g small spelt from Ventoux
60 g of green pepper
20 g of red onions
Salt and pepper.
Wash and cook the spelt in water for at least an hour (add salt at the end).
Cut thin slices of courgette with a mandolin and marinate in a little olive oil. Cook the snow peas in a salted pan for 2 minutes and cool them down.
Prepare the vinaigrette by mixing the aix&terra Organic Lemon Olive Oil and the aix&terra Raspberry Pulp Vinegar.
Cut the cherry tomatoes in half. Arrange in the shape of a Buddah bowl and add a quenelle of Organic chilli pepper poichade aix&terra.
