Beef Tataki, organic mayonnaise with aix&terra summer truffles
Preheat your oven to 180°C. Wash and cut the potatoes in half and place them in a dish, seasoning them to taste. Bake for about 35 minutes.
Sear the meat on both sides in a pan, then return it to the marinade and let it cool. Arrange the Organic mayonnaise with summer truffle aix&terra in a ramekin.
Arrange the potatoes in the centre of the plate. Cut thin slices of meat and arrange them around the potatoes in a rosette shape.
Sprinkle with fleur de sel. Baste the meat with the remaining marinade!

Accompany your tataki with a bunch of arugula that you will sprinkle with the rest of the aix&terra vinegar marinade.
