This unique cream uses anchovies from the Roque house (a family house in Collioure, founded in 1870, one of the last to perpetuate the ancestral and artisanal tradition of salting anchovies). For this Délice d'Anchoïade, we combine anchovy fillets with fennel, olive oil, a touch of organic mayonnaise and lemon juice.
The Mediterranean recipe is reinvented with vegetable ingredients from Provence to give a smooth "earth & sea" cream. Soft and light in the mouth, it reveals the flavour of anchovies without aggressiveness.
