500g cauliflower
320g puff pastry
1 egg
100 de Aix&terra Anchoïade Delight
100g of Organic green tapenade aix&terra
40ml ofOrganic lemon olive oil aix&terra
50g mesclun lettuce
Salt and pepper.
Cook the cauliflower heads in boiling water for 4 minutes. Plunge into iced water. Squeeze dry.
Cut rectangles of puff pastry. Place a spoonful of Aix&terra Anchoïade Delight in the centre. Add a cauliflower head and close with the puff pastry to form a ball. Brush with egg yolk. Bake at 180°C for 25 minutes, until golden.
Wash the mesclun lettuce. In a bowl, pour the Organic green tapenade aix&terra and theOrganic lemon olive oil aix&terra. Blend. Add a little egg yolk and a teaspoon of hot water to stabilise the dressing.
To serve, spoon the vinaigrette over the centre of the plate. Cut the pithiviers in half and place on the plate. Dress the mesclun salad with aix&terra Organic Lemon Olive Oil. Season with salt and pepper.
