The recipe

PDO Provence fig pulp adds a sweet taste to the vinegar. Handcrafted in Provence. Raspberry pulp adds a fruity note on the palate. The tomato and basil flavours, two essential Provence ingredients, will add freshness to your dishes.

How to use it

Recipes from l'Ecole des Chefs aix&terra: on your green salads in vinaigrette or to deglaze a duck breast, Poichichade legume salad with organic chilli, Raspberry pulp vinegar, Sea bream ceviche with tomato and basil vinegar, etc.

Composition

Fig pulp vinegar: purple fig pulp (40%), cane sugar, white wine vinegar (32%). Raspberry pulp vinegar: raspberry pulp (30%), cane sugar, white wine vinegar (30%) (sulphite), pectin. Tomato basil vinegar: tomato pulp (42%), spirit vinegar (33%) (sulphite), cane sugar, basil (3%), pectin. Store away from heat and light.
