A spoonful of Carrot Ketchup
A net of organic PGI garlic olive oil
400g of potatoes
To make this recipe for Peking Duck, in a frying pan with a little oil, mark the duck on each side.
Preheat the oven to 180°, place the duck in an oven dish and brush it with the Caramel with spices. Brown the duck for 5 minutes at 180°.
In the meantime, start the dressing in a flat, warm plate.
Arrange the potato crush with a cookie cutter, drizzle with IGP garlic olive oil (2 g), arrange the two carrot ketchup quenelles, remove the skewers from the oven and arrange them on the plate. Spoon the caramel spice juice over the skewers.
