120 g liquid cream
180 g cottage cheese
20 g fresh basil
220 g peach
40 g caster sugar
40 g flour
40 g soft butter
40 g almond powder
140 g of Aix&terra lemon cream
Cut 50 g of peach into pieces. Make a peach-basil compote in a saucepan, cook for 10 minutes. Cut 60 g of peaches into brunoise and set aside in a cool place.
Mix the liquid cream, cottage cheese and 20 g of Aix&terra lemon cream. Beat with a mixer and place in a pocket. Set aside in a cool place.
Prepare the crumble by mixing flour, butter, sugar and almond powder. Brown in the oven at 180 degrees.
When you are ready to serve, put the whipped cream in the verrines. Then the compote, the remaining lemon cream, the fresh fruit and finish with the crumble.
Serve immediately.
