50g of Aix&terra PGI Provence flower honey
100 de Organic orange marmalade aix&terra
50g caster sugar
200ml liquid cream 35%
50g chopped pistachios
100 chopped almonds
25 icing sugar
25g fresh redcurrants
Mix the pistachios and chopped almonds with the icing sugar. Roast and leave to cool.
Separate the egg whites from the yolks. Whisk the egg whites with the Aix&terra PGI Provence flower honey. Blanch the yolks with the icing sugar. Mix the two ingredients. Whip the 35% liquid cream. Fold it into the white-yolk mixture, along with the pistachios and roasted almonds.
Pour into your moulds. Place in the freezer for 24 hours.
To serve, place the nougat in the centre of the plate. Place a pretty quenelle of Organic orange marmalade aix&terra. Finish with a little pistachio-almond mixture and a few redcurrants.
