240g fresh strawberries
80g fresh raspberries
240g peaches
20ml of Raspberry pulp vinegar
20ml ofOrganic basil olive oil aix&terra
40g shortcrust pastry
20g icing sugar
10g fresh basil
10g coriander
Prepare the fruit. Halve the peaches and cut into even wedges. Halve the strawberries. Set aside in a cool place.
Make triangles of shortcrust pastry. Sprinkle with icing sugar. Place in the oven between two baking trays until golden brown.
Mix the raspberries, strawberries and peach quarters with the Raspberry pulp vinegar aix&terra and theOrganic basil olive oil aix&terra. Place on the plate. Add the sprigs of basil and coriander. Form a pretty quenelle of lime ice cream and arrange the crispy sweet triangle.
