500g fresh broccoli
1 chicken stock cube
75g fresh cream
60g of Organic black tapenade aix&terra
150ml ofOrganic lemon olive oil aix&terra
20 g country-style bread
Salt and pepper.
Preheat your oven. Cut small bread croutons. Drizzle with olive oil. Place in the oven at 180 degrees until golden brown.
Dissolve a cube of chicken stock in a pan of boiling water and immerse the broccoli for 15 minutes.
Blend with a little of the cooking water to the desired consistency, then stir in the crème fraîche. Season with salt and pepper.
To serve, pour the broccoli velouté over the centre of the plate. Using a teaspoon, make a pretty quenelle of broccoli cream. Organic black tapenade aix&terra (15 g per person). Spoon over the velouté.
Finish with a drizzle ofOrganic lemon olive oil aix&terra. Season with salt and pepper. Enjoy immediately.
